After some rainy days the Sun came out! Thus in order to prevent any nasty sickness and to not miss these beautiful days ahead.... let's make this beautiful and full of vitamins TOMATO SOUP.
Ingredients:
1 Onion finely sliced
3 Diced tomatoes
140 gr tomato paste
1 salt reduced Vegetable stock
3 celery sticks, sliced
1 tsp of fresh grated ginger
1/2 cup red lentils
Salt&pepper
to serve:
Shaved or grated Parmesan Cheese
Chopped fresh basil
1 cup Croutons (optional)
Fry stirring with some olive oil in a pan the onion, tomatoes and celery until medium soft. Then add the tomato paste, pepper, and fresh ginger and stir again. Add minimum 2 1/2 cups of hot water (it depends on your pan) with the veggie stock, stir and correct salt. Add lentils and bring soup to boil, turn then heat to minimum and leave to cook on a slow heat for 45 min. If necessary add water and correct salt. Before serve sprinkle some shaved or grated parmesan in each dish, with fresh chopped basil and if you like some croutons.
